Pumpkin Stew


Don't ask why I put the roll in the pic LAME!- OH Ya, Because it doesnt look very good. LOL 
BUT IT'S YUMMY!!!!!!

PUMPKIN STEW

Small pumpkin (or half of a large)
2 red potatoes chopped or other (if other potatoes skin and chop small)
1-2 Cups finely chopped celery (2 cups for hardier stew)
2 med finely chopped onions
1 cup carrots
2 boxes of Organic Free Range Chicken Broth
4 chicken thighs and 2 Chicken Breasts with bones (the bones add lots of flavor when boiling) To save time use boneless skinless breasts (4 or 5)
2 scallions put in whole remove before serving
 3 tablespoons of thyme
1 tablespoon of curry powder (optional but adds complex flavor to the pumpkin)
4 cloves crushed garlic
1 tablespoon allspice
1/2 tablespoon of pepper

Directions
I Admit, it's not simple but the result is delish!
And if you make a huge pot you can freeze and save leftovers!
  • Half or quarter the pumpkin, seed then bake at 350 for 1 hour or until soft. 
  • While pumpkin is baking, Pour 1 box of chicken broth in a medium pot. Remove skin (not bones) from chicken thighs and breasts. 
  • Place chicken into broth and bring to a rolling boil. Boil for 15-20 min.
****NOTE: To save time use boneless/skinless chicken chop into chunks and SKIP the straining step later on as it's not necessary without bones
  •  While pumkpin is baking and chicken is boiling chop up veggies. Then add to boiling chicken along with spices. 
  • Boil on low for another 10 min. After this time chicken should be falling off the bones. Boil longer if necessary until chicken falls off the bones.
  • When pumpkin is soft remove the skin and dice. In a separate, large pot place diced pumpkin and the second box of chicken broth then loosely mash the pumpkin. This will result in a think stew like consistency with small chunks of pumpkin.
  • Place large pot in sink then strain chicken broth with chicken and veggies  into the pumpkin. By straining you can easily pick out (with tongs) the chicken and bones. 
  • Pour the veggies into stew. 
  • Toss the bones. 
  • Chop the chicken into chunks, shred or leave as is.
  • Add salt and pepper to taste. Season as needed to taste.
To make vegetarian substitute chicken broth for veggie broth and add more veggies and potatoes instead of chicken.

Everyone seems to be making pumpkin stew right now. Am I the only one that thinks it doesn't look good?

This doesn't look that great (sorry!), but sounds positively delicious. Perhaps I will look for some sort of crockpot variation of this recipe - I am all about crockpots here - so hands off :)

also, i am still figuring out all this comment stuff. sorry. but yes, it is totally ucky working at the hospital. we have had a major outbreak of the flu && H1N1 in our area. i feel ucky everyday when i leave - its bathtime, first thing ;)
